WINE MAKING CLUES: Bottling for aging wines

Between May and July came some of the most hard works we have in this season. In the vineyards we have to make the different tasks of green pruning (to remove some leafs of the vine and some that grow between shoots, two process named “espergura” and “desniete”). Meanwhile, in the winery, it’s time for bottling the aging wines. A key process to can age the wine in bottle. 

Once the wines from two harvest ago have finished their aging period in barrel it’s time for make the coupages. The characteristics of our wines are going to be decided by “playing” with the different sets, different barrels and cooperages where the wines have been aging. It’s very important because each cask or cooperage provides to the wine some features depending on the type of grains, the time of use, the toast levels, the type of wood… 

When each wine consignment is already classified we have to make the clarification process (only if it’s needed) in order to get a better colour. And then, the bottling process. For this, we always try to make this task under the influence of the waning moon. This way, the wine will be stable and it wouldn’t loose it’s propierties. 

And rest. That’s all. The filled up bottles need to sleep in the bottle room for several months until they will be labeled and released into the market. It would be the perfect time for share with you friendship and enjoyment moments.
