It is considered ecological that crop based on the optimal use of the natural resources that is managed autonomously and that provides us with food while preserves the characteristics of the land. That is, a crop that protects the environment of the area in which it is located through its self-management.

This is a way of understanding viticulture that gains ground in the philosophy of wineries that seek the maximum expression of the terroir in their wines. And one of them is Bodegas Ostatu. Located in Samaniego, in the Rioja Alavesa region, the winery owns 34 hectares of vineyard where sustainability is the priority.

Ostatu has always been oriented towards the respect for the fruit and the soil on which its vineyards are located, a hallmark of their wines. However, from some years now, this family has decided to bet on a sustainable viticulture that step by step is becoming into organic.

In this commitment to quality in their viticulture, the Saenz de Samaniego family is not alone. They have the hand of small winegrowers of Samaniego, with whom they collaborate for several generations, when their father, Doroteo Sáenz de Samaniego, ran the business. In this way, improvements have been made in their cultivation techniques that affect all the vineyards from which their wines are made.

One of them has been the creation of a parcel-based GIS (Geographical Information System), a very useful tool for the control of the different plots. With this is intended to make available to the winery, and the viticultors with whom they collaborate, a geographically located parcel classification system which provides them with different useful information for cultivation. For example, in 2014, flights were conducted to measure the vigor and variability of the vineyards. Also, the plots can be differentiated by age, varieties, etc. For this project, as well as for technical advice on this path towards ecological viticulture, the Rioja Alavesa winery has had the company Enonatura.

In the framework of this collaboration, the prestigious viticulture consultant, Richard Smart, has visited the winery. The Australian expert is immersed in a global study of the affectation of wood diseases and has visited Ostatu as a sample from the Rioja Alavesa area to continue his study. "The vineyards I have visited are beautiful, they are very old vines, which I love. It's something I'm not used to. A really beautiful landscape with the mountain in the background "he declared during his visit.

This turn towards the ecological is an interesting task that delves into the main objective of Ostatu: to continue making wines of singular quality.
